                                      Notes on coated pans
                                      PTFE Behind several different brand names is the substance polytetrafluoroethylene, better known as PTFE. Typical for the PTFE coating is the wax-like surface. It is very resistant to cold, heat and chemicals, but also relatively thin and scratch-sensitive and should not be heated above 260°C. A pan with a PTFE coating is therefore not suitable for sharp browning. Titanium Pans that still have a ceramic layer of an aluminium-titanium mixed oxide underneath the PTFE are of a slightly higher quality, less scratch-sensitive and easier to clean. However, the "titanium pans" are also not suitable for sharp browning. DLC (Diamond Like Carbon) DLC non-stick coatings contain a diamond-like carbon. They are altogether more robust than PTFE-containing coatings and withstand temperatures up to 300°C. Enamel The main purpose of enamel coating is to protect the pan from corrosion and undesirable reactions with food ingredients. As with ceramic coatings, the main component of egg enamel coatings is silicon, but not in the form of a thin film, but a glass-like, smooth, non-porous coating that allows easy cleaning. In frying behaviour, the enamel pan resembles a stainless steel pan. A dark inner surface guarantees optimum heat transfer. Silargan / Ceramics Silargan is a wafer-thin ceramic pan coating named after its basic component silicon oxide. Pans with a ceramic protective coating can be heated up to 400°C and are also much less sensitive to mechanical influences. Silargan pans are easy to clean and suitable for almost all types of cookers. They are suitable for searing and braising. Overheating of frying fats would impair the non-stick properties of ceramic non-stick coatings, which is why pan manufacturers advise against the use of oils that cannot be heated to high temperatures, usually cold-pressed oils. In general, you should not scratch around in any coated pan with hard metal cookware. A coated pan should not remain uncleaned for too long after use. The exact method of cleaning depends on the coating. Not much wrong with hot water, detergent and a soft sponge. Some experts even advise that when cleaning non-stick coated pans, you should limit yourself to wiping them with kitchen paper. Only those models that have been expressly declared dishwasher-safe by the manufacturer should be cleaned in the dishwasher. After cleaning the pan, it should never be regreased, as this fine film of oil can begin to resinify and the ever-growing layer of tar cannot be removed. In the long run, this can also damage the non-stick coating. Either way, non-stick coatings do not last forever. Sooner or later, every coating dissolves. Then the pan should definitely be replaced.
