The strainer is a small but important tool for the preparation of cocktails, unless you use a cocktail shaker in which the sieve is already integrated, as is the case with the three-part shakers. For all other shakers, the sieve is required to retain fruit pieces and ice cubes in the cocktail shaker when the ready-mixed drink is poured into the serving glass. There are basically two types of bar strainers: the Hawthorne Strainer with a flexible wire spiral that adapts exactly to the opening of the cocktail shaker and the Julep Strainer, a large, round spoon with small holes. Such a sieve spoon is held in the shaker with the curved side down for pouring.
