Cheese slicer, Girolle

With a hand cheese slicer, hard and medium-hard cheeses can be cut into even slices. But there are also special models for soft varieties. The thickness of the slices can be varied slightly depending on the angle at which the cut opening is made on the piece of cheese. A "girolle" is a special form of the cheese slicer and actually more of a cheese scraper, especially for Tête-de-Moine cheese, a semi-hard cheese made from untreated cow's milk, which has its origins in the 12th century. Traditionally, Tête de Moine is not cut into slices, but scraped into extremely fine rosettes. The special tool for this, the girolle, on the other hand, has only been on the market since the 1980s.
